In 2020, we fermented strawberries, rhubarb, peaches, raspberries, apples, pears, and blueberries. The vinegar is then infused with nasturtium, rose, calendula, basil, dill, sage, lemon marigold, yarrow, chive, and hyssop flowers. Intensely perfumed and berry-forward, it finishes with notes of pepper and honey.
