SPICED FRUIT POPSICLES

Ingredients

  • 2 Pints Strawberries

  • 1.25 cups Water

  • 6 Tbsp Sugar

  • 5 Tbsp Strawberry Mint Vinegar

  • 3 Tbsp Maple Syrup

  • 2 Tbsp Mint

  • 1/4 tsp Cinnamon

  • 1/8 tsp Cumin

  • 1 pinch Salt & Black Pepper

EQUIPMENT: blender or food processor, fine mesh strainer, medium mixing bowl, popsicle molds (10 x 3oz)

Instructions:

Clean and hull two pints of fresh strawberries. Roughly chop and set aside about half a cup, then chop these finer and mix with a tablespoon or two of finely chopped fresh mint. Set this garnish mixture aside.

In a blender, combine the remaining strawberries with one and a quarter cups of water, three tablespoons of maple syrup, six tablespoons of sugar, and five tablespoons of our Strawberry Mint Vinegar. Add the spices—cinnamon, cumin, black pepper, and salt. If you’re unsure about the level of spice, start with a little and adjust to taste after blending. Blend until smooth, then strain through a fine mesh sieve for a silky texture. Taste the strained mixture and adjust vinegar, sweetness, or spice as needed.

Gently stir in the chopped berries and mint, then pour into popsicle molds, leaving a little room at the top for expansion. Freeze until solid, about 4–6 hours or overnight.

For a no-fuss version, skip the straining step and blend everything—including the chopped berries and mint—into one batch. The result will be slightly chunkier but still delicious.

Either way, these pops freeze beautifully, release cleanly from the molds, and strike a refreshing balance of sweet fruit, cool mint, warm spice, and just enough tartness for the perfect summer treat.
